Where It All Began

A Story Born in the Grand Bazaar

In 1978, Adem Usta — a self-taught confectioner with no culinary degree but a lifelong love of halva — opened a small stall in Istanbul's Grand Bazaar. He had one rule: never compromise on the tahini.

He sourced pure sesame tahini from Urfa, selected his sugar with meticulous care and stirred every batch in the same copper cauldron with a wooden paddle he had carried from his master's kitchen. Istanbul had never tasted anything quite like it.

Word spread. Queues formed. By 1985, Helvacı Adem had outgrown the bazaar and opened a second shop in Ankara. More than four decades later — and beloved across Turkey — Helvacı Adem has opened its first location outside Turkey, right here in North York, Toronto. The rules remain the same: pure ingredients, handmade always, no shortcuts.

The Helvacı Adem Story

1978

The First Stall, Grand Bazaar

Adem Usta opens a small halva stand in a narrow entrance of Istanbul's Grand Bazaar. Three varieties, one set of scales, and one rule: never compromise on the tahini.

1985

Beyond the Bazaar

Word spreads and the queues grow. Helvacı Adem outgrows the bazaar and opens a second shop in Ankara.

1998

A Household Name

Two decades in, Helvacı Adem is known across Turkey for traditional tahin helvası, baklava and lokum made the old way.

2015

Straight from Gaziantep

Direct partnerships with Gaziantep growers secure the finest pistachios for our baklava and helva, season after season.

2026

Helvacı Adem Comes to Canada

Our first location outside Turkey opens at 886 Wilson Ave, North York — the only Helvacı Adem in Canada, bringing Grand Bazaar recipes to Toronto.
